Aparajita Flower Tea

Aparajita — Clitoria ternatea — grows wild at Chetna Farm. The flowers are dried and packed whole.

Steep a small handful in hot water for 3–4 minutes. The infusion turns a deep, vivid blue. Squeeze in a little lemon juice and it shifts to violet — a natural pH reaction in the anthocyanins.

The flavour is earthy and mild. No caffeine. Pairs well with honey.
